INGREDIENTS
- 3 zucchini, cut in half lengthways
- canola oil spray
- half medium brown onion, finely chopped
- 1 teaspoon crushed garlic
- 3 anchovies
- half teaspoon dried oregano
- tinned diced tomato
- 180g tin tuna in brine, drained
- 2 tablespoons sliced black olives
- salt and pepper
- mozzarella cheese, grated
METHOD: Preheat oven to 180 degrees. Spray oven proof dish with oil. Score the skins of the zucchini with a knife and scoop out the white flesh and keep. Place zucchini boats in oven proof dish. Meanwhile, spray a non-stick frypan with oil and heat to medium. Cook onion, garlic and zucchini flesh with anchovies, oregano until onion is soft. Add tinned tomatoes then fill the empty tin to half with water and add to the frypan. Add drained tuna, olive and salt and pepper to taste. Cook on low to medium heat uncovered until sauce thickens. Spoon all tuna mix into the zucchini boats and top with grated cheese. Place in oven and cook for 20 – 25 minutes…until cheese is golden.
SERVING SUGGESTION: Serve with a crunchy salad. Awesome carb free substitute for pizza. Alternatives to tuna include beef or chicken mince, lentils or beans. Alternatives to zucchini include eggplant and capsicum. Excellent hot or cold.
