INGREDIENTS
- 1 egg
- 1 cup egg whites
- half tsp cinnamon
- canola oil spray
- 1 cup frozen blueberries or fresh seasonal fruit
- 1 tablespoon low fat Chobani yogurt
- 1 tablespoon flaxseed meal
- drizzle maple syrup
METHOD: Spray non-stick frypan with oil and place on medium heat. Blitz egg, egg white and cinnamon in Nutribullet. Gently pour egg mix into frypan and reduce heat to medium-low. Meanwhile thaw frozen berries in microwave for 1 minute or chop fresh fruit. Once egg mix has stiffened approx 3 – 5 mins, add the fruit and fold one half of the omelette over to cover the fruit. The cooked side should be golden. Slide the omelette onto your plate and top with yogurt, flaxseed meal and maple syrup.
HINT: You can buy egg whites in a carton from the supermarket to save time.
