INGREDIENTS
- 1 egg
- 1 cup egg whites
- salt and pepper
- canola oil spray
- 1 tomato, diced (optional half cup diced capsicum)
- half a zucchini, diced
- 3 mushrooms, sliced
- 2 slices ham, diced
- 1 handful baby spinach
- half tsp minced garlic
- half cup grated cheese or feta crumbled
- 1 tablespoon fresh or 1 tsp dried herbs (oregano, basil, parsley)
- 1 tablespoon flaxseed oil
METHOD: Spray non-stick frypan with oil and add all vegetables, herbs and ham. Cook on medium heat until softened and colours are vibrant..approx 5 mins. Reduce heat to low and add garlic and mix through. Combine egg, egg whites, salt and pepper using whisk or Nutribullet. Pour egg mix evenly into frypan and top with cheese. Cook for approx 3 – 5 mins until it starts to stiffen then move to griller to cook the top and melt the cheese…approx another 3 mins. Serve with flaxseed oil drizzled on top.
HINT: Don’t be afraid to change the vegetables or swap ham for smoked salmon, or skip the meat/fish altogether. This recipe make one large omelette ie. 2 servings.
