INGREDIENTS
- canola oil spray
- 1 brown onion, finely diced
- 500g chicken mince
- 1 tin black beans, drained and rinsed
- 1 tin corn kernels
- 1 red capsicum, diced
- 1 large carrot, grated
- 1 zucchini, grated
- 1 tsp dry chilli flakes
- 1 tsp cayenne pepper or chilli powder
- 1 tsp cumin
- salt and pepper to taste
METHOD: Spray non-stick frying pan with oil and heat. Cook onion till softened then add spices and cook till aromatic. Add chicken mince and cook thoroughly. Add all vegetables and beans to chicken and combine well. Allow to simmer until vegetables have softened and any liquid has thickened.
SERVING SUGGESTION: Serve on steamed vegetables or in heated tortillas as per the instruction on the packet. Add avocado, tomato salsa, light sour cream or yogurt for more flavour.
