INGREDIENTS
- 4 eggs
- 1 tin light evaporated milk
- dash of nutmeg
- salt and pepper
- canola oil spray
- 2 handfuls baby spinach
- 1 tin pink salmon, drained and bones removed
- 1 tin corn kernels, drained
- 1 handful of grated cheese
- 1 tomato
METHOD: Preheat oven to 180 degrees. Blitz first 4 ingredients in Nutribullet or combine in a mixing bowl. Spray pie dish lightly with oil and add spinach, salmon and corn – note you can use other ingredients like broccoli, feta, asparagus, zucchini, mushrooms – what ever you have handy. Pour over the egg mixture, sprinkle cheese on top and finish with slices of tomato. Place in oven and cook for 50 mins or until egg mixture is stiff. Suggest turning the pie dish 180 degrees after 25 mins to ensure even cooking. Serve with a crunchy salad.
